How to cook Pla Nuang or Steamed fish?
Posted by Tomyam-kung on Wednesday, 16 December 2009 at 21:06Steaming is the best cooking method for safe nutrient ingredient of food. So today I show Steamed Fish in Thai style. It's healthy and diet food. Good for every one.
Ingredient;
1. 1/2 kg of a fish(you can choose the fish you like but here I choose Pla Nin or tilapia.)
2. Salt
3. Takrai or lemongrass
4. kaffir lime leaf
5. Garlic
6. Lemon
7. Fish sauce
8. Chili (you can ignore this one)
9. Vegetable
10. celery
11. sugar
Preparing;
1 Chop lemongrass to be as a photo below.
2. Chop kaffir lime leaf.
3. Chop garlic.
4. Prepare you fish and salt down (use a bit of salt).
5. Chop chili
6. prepare you vegetable for steaming.
Start cooking the fish;
1. Pound lemongrass, kaffir lime leaf, garlic, and celery root.
2. Put pounded ingredient above in to the fish. or just place on the fish.
3. Put your vegetable in to casserole for steaming. then put the fish on vegetable. Then steam it about 45 minute or put in microwave.
Cooking sauce; choose one way below.
Pound or chop chilies and garlic. Put in to the bowl add 3 table spoon of fish sauce, add 1 table spoon of lemon juice, 1/2 tea spoon of sugar.
When you eat it, dip fish meat and vegetable with sauce eat with rice. :)

How to make Tamarind Sauce ?
Posted by Tomyam-kung on Sunday, 13 December 2009 at 13:23Tamarind sauce is one of Thai spice that make nicer taste. We use sour Tamarind. Why don't we use lemon? Because Tamarind have softer sour taste. When add in some food it will be sweet and a little bit sour. That why we use tamarind. But lemon have strong sour taste we use for the menu that have strong taste such as Som Tam, Yam, Tomyam, etc...
The way to make it very easy. Just steep it water(just enough for your menu) or boil it then keep it in the freezer. I think it's cheaper than buy a Pack of Tamarind sauce. And make sure you have 100% Tamarind sauce. Tamarind good for healthy. :)
How to cook Pad Thai

I though every one know Pad Thai. It's a famous Thai food. I like to eat it with Som Tam or Papaya salat. But i'm not cook well for this menu. So I find another one tell you. I used to tried to cook it. but it's not good. My mom and my sister is good about it.
Main ingredient;
1. Rice noodle
2. Tamarind sauce for pad thai (you can see in VDO as below).
3. Seasoning
For another things such as fresh/dried shrimp, firm tofu, egg you can ignore it if you don't have.
Some time I cook it with out that but I eat with another food. Thai food is not single dish so you can eat with any thai food. :)
Cooking tips;
1. The most important of delicious Pad Thai is Tamarind Sauce.
2. For Noodle you can change to be Cellophane noodle or another type of Thai noodle. But you have to soak in water till it soft. The time of soaking is depend on noodle type, mostly is about 15-30 minutes. After that mix with a little bit of oil that make it not stick together. :)
3. Soak dried shrimp before cooking. It will be soft and nicer taste.

How to cook Nam Prik Noom?
Posted by Tomyam-kung on Thursday, 10 December 2009 at 19:36As I say I love to eat vegetable. So I show one of my favorite menus again. It is Nam Prick Noom. Thai people eat Nam Prick with vegetable same as eat French-fried with ketchup. Here it’s Nam Prick in my style. So it’s not spicy for Thai people.
Ingredient;
1. 5 young chili (or 2 green pepper)
2. 5 Thai onions
3. 3 Garlic
4. Fish sauce
5. Thai lemon
Preparing ingredient;
1. peel the onion as in photo
2. peel the garlic as in photo
Start cooking;
1. Roast the onions (cut to be 4 part), garlic and chili.
2. Pestle the prepared ingredient as above. Also you can spin it.
3. Add fish sauce and lemon that you think tastes right.
Note;
Raise the spicy taste by lemon
This menu I eat with fresh or boiled vegetable that you like, boiled egg or Fried Pork Skin. And don’t forget hot rice. :D

How to cook Kao Tom or Boiled rice?

I decide to cook Kao Tom or Boiled rice. It’s very easy to cook. This is ingredient that I have. I like to eat it when I was sick. It is good for healthy.
Ingredient;
1. 1 cup of polished rice (you can use cooked rice)
2. Garlic
3. 200 grams of mined pork (you can use fish, sliced pork, chicken or sea food as you want)
4. Pepper
5. Coriander or Pag-Chee in Thai
6. Salt
7. Water
Preparing;
1. Pestle garlic and pepper
2. Mix the pork, pestle garlic and pepper, ½ tea spoon of salt. Then form 1 cm diameter balls (you can ignore this step if you add chicken, fish or seafood).
Cooking step:
1. Boil ¾ liter of water.
2. Add garlic and ½ tea spoon of salt.
3. Add rice waiting till rice being done.
4. Add mixed pork while it is boiling, wait till pork is done.
Cooking Tips:
1. Add fresh meat while it’s boiling, the meat will not have bad smell when you eat.
2. After add fresh meat don’t stir it until it is done. I’m sure your meat will not have bad smell when you eat.
3. It doesn’t matter if you meat is not fresh. Hehehehehe
