How to cook Pla Nuang or Steamed fish?
Posted by Tomyam-kung on Wednesday, 16 December 2009 at 21:06Steaming is the best cooking method for safe nutrient ingredient of food. So today I show Steamed Fish in Thai style. It's healthy and diet food. Good for every one.
Ingredient;
1. 1/2 kg of a fish(you can choose the fish you like but here I choose Pla Nin or tilapia.)
2. Salt
3. Takrai or lemongrass
4. kaffir lime leaf
5. Garlic
6. Lemon
7. Fish sauce
8. Chili (you can ignore this one)
9. Vegetable
10. celery
11. sugar
Preparing;
1 Chop lemongrass to be as a photo below.
2. Chop kaffir lime leaf.
3. Chop garlic.
4. Prepare you fish and salt down (use a bit of salt).
5. Chop chili
6. prepare you vegetable for steaming.
Start cooking the fish;
1. Pound lemongrass, kaffir lime leaf, garlic, and celery root.
2. Put pounded ingredient above in to the fish. or just place on the fish.
3. Put your vegetable in to casserole for steaming. then put the fish on vegetable. Then steam it about 45 minute or put in microwave.
Cooking sauce; choose one way below.
Pound or chop chilies and garlic. Put in to the bowl add 3 table spoon of fish sauce, add 1 table spoon of lemon juice, 1/2 tea spoon of sugar.
When you eat it, dip fish meat and vegetable with sauce eat with rice. :)
It's my favorite food.

How to make Tamarind Sauce ?
Posted by Tomyam-kung on Sunday, 13 December 2009 at 13:23Tamarind sauce is one of Thai spice that make nicer taste. We use sour Tamarind. Why don't we use lemon? Because Tamarind have softer sour taste. When add in some food it will be sweet and a little bit sour. That why we use tamarind. But lemon have strong sour taste we use for the menu that have strong taste such as Som Tam, Yam, Tomyam, etc...
The way to make it very easy. Just steep it water(just enough for your menu) or boil it then keep it in the freezer. I think it's cheaper than buy a Pack of Tamarind sauce. And make sure you have 100% Tamarind sauce. Tamarind good for healthy. :)
How to cook Pad Thai

I though every one know Pad Thai. It's a famous Thai food. I like to eat it with Som Tam or Papaya salat. But i'm not cook well for this menu. So I find another one tell you. I used to tried to cook it. but it's not good. My mom and my sister is good about it.
Main ingredient;
1. Rice noodle
2. Tamarind sauce for pad thai (you can see in VDO as below).
3. Seasoning
For another things such as fresh/dried shrimp, firm tofu, egg you can ignore it if you don't have.
Some time I cook it with out that but I eat with another food. Thai food is not single dish so you can eat with any thai food. :)
Cooking tips;

How to cook Nam Prik Noom?
Posted by Tomyam-kung on Thursday, 10 December 2009 at 19:36As I say I love to eat vegetable. So I show one of my favorite menus again. It is Nam Prick Noom. Thai people eat Nam Prick with vegetable same as eat French-fried with ketchup. Here it’s Nam Prick in my style. So it’s not spicy for Thai people.
Ingredient;
1. 5 young chili (or 2 green pepper)
2. 5 Thai onions
3. 3 Garlic
4. Fish sauce
5. Thai lemon
Preparing ingredient;
1. peel the onion as in photo
2. peel the garlic as in photo
Start cooking;
1. Roast the onions (cut to be 4 part), garlic and chili.
2. Pestle the prepared ingredient as above. Also you can spin it.
3. Add fish sauce and lemon that you think tastes right.
Note;
Raise the spicy taste by lemon
This menu I eat with fresh or boiled vegetable that you like, boiled egg or Fried Pork Skin. And don’t forget hot rice. :D

How to cook Kao Tom or Boiled rice?

I decide to cook Kao Tom or Boiled rice. It’s very easy to cook. This is ingredient that I have. I like to eat it when I was sick. It is good for healthy.
Ingredient;
1. 1 cup of polished rice (you can use cooked rice)
2. Garlic
3. 200 grams of mined pork (you can use fish, sliced pork, chicken or sea food as you want)
4. Pepper
5. Coriander or Pag-Chee in Thai
6. Salt
7. Water
Preparing;
1. Pestle garlic and pepper
2. Mix the pork, pestle garlic and pepper, ½ tea spoon of salt. Then form 1 cm diameter balls (you can ignore this step if you add chicken, fish or seafood).
Cooking step:
1. Boil ¾ liter of water.
2. Add garlic and ½ tea spoon of salt.
3. Add rice waiting till rice being done.
4. Add mixed pork while it is boiling, wait till pork is done.
Cooking Tips:
1. Add fresh meat while it’s boiling, the meat will not have bad smell when you eat.
2. After add fresh meat don’t stir it until it is done. I’m sure your meat will not have bad smell when you eat.
3. It doesn’t matter if you meat is not fresh. Hehehehehe

How to cook Pad Pak or Fried vegetable?
Posted by Tomyam-kung at 14:40Vegetable, it is good for healthy. I like to eat vegetable very much. So I try to add vegetable in my menu. This is my favorite dish too. Although, I don’t know which food I don’t like. :p
Ingredient;
1. 500 grams of Cabbage
2. 2 Chinese broccoli
3. 1 Carrot
4. 5 Baby corns
5. 500 grams of Napa cabbage
6. Cauli flower
7. 5 Shiitake mushrooms
8. Garlic
9. 2 tea spoon of Soy sauce
10. 2 soup spoon of Oyster sauce
11. 1 tea spoon of sugar
12. 5 soup spoon of water
13. Butter or oil
14. Chicken meat or pork
*you can add your vegetable as you want.
Preparing vegetable;
1. Cut cabbages, napa cabbage its long about 3 cm.
2. Peel stem of Chinese broccoli then cut its long about 5 cm.
3. Cut Shiitake mushrooms.
4. Slice carrot to be shape.
5. Peel garlic then stave it.
6. Boil baby corn and Chinese broccoli and carrot till it are done.
Cut chicken or pork to be 2 cm square.
Cooking fried vegetable:
Put the pan on stove turn on to medium. Add butter till it hot then add prepared garlic fry it about 5 second then add chicken or pork. Add soy sauce then fry it till you make sure it mixed. Then add water and boil it about 3 minute. Add ear mushroom fry it, then add cabbage and napa cabbage and fry it till it being done. Then add boiled carrot, baby corn and Chinese broccoli. Add oyster sauce fry it close the stove.
Cooking tips:
1. Frying food should use high temperature.
2. Boil Chinese broccoli for take away its stink.
3. Add a bit of salt in water before boil vegetable. Your vegetable will be nicer and sweet.
How to cook Kai Yang or Thai Chicken Grilled?
Posted by Tomyam-kung at 11:54Kai yang is one of famous Thai food. You can buy Kai Yang from everywhere in Thailand. I love to eat Kai Yang with sticky rice. I though it’s very easy to cook. Since I was started learn to cook Kai yang it not easy, because you can’t try it before grilling. Some time it’s salty some time it’s tasteless. But now I haves no problem anymore. Here it’s my taste.
Ingredient:
1. 1 Kg or 2.2 Pounds of chicken
2. 3 soup spoon of soy sauce
3. 2 soup spoon of oyster sauce
4. 2 soup spoon of fish sauce
5. 1 tea spoon of sugar
6. Garlic
7. 1 tea spoon of black pepper
Let’s start cooking;
Prepare garlic and black pepper by pestle.
Put chicken in a bowl mix soy sauce, oyster sauce, fish sauce sugar and prepared garlic and black pepper. Then marinade it 10 minutes. After that, grill the marinade chicken. You can put it in microwave also.

How to cook Kai Toon or Thai Steamed Eggs?

It is very easy to cook. This is Kai Toon in my style. You will get Thai recipe and cooking tips here. I hope you enjoy cooking today.
Ingredient;
1. 3 eggs
2. 2 soup spoon of fish sauce or soy sauce or salt
3. Onion
4. Thai garlic
5. Half piece of Thai lemon
6. Chili (depend on you)
7. 2 soup spoon of water
8. 1 tomato
9. Anything else in your freezer.
Preparing ingredient;
1. Cut Onions and tomatoes to be square.
2. Garlic; peeling and slice garlic to be shape.
Start cooking;
1. Boil water in a pot which you can place a 5-6 inch size of bowl. Add water 1 inch high.
2. Beat the egg in a 5-6 inch size of bowl till it mixed and you see air bubbles. Then add onion, garlic, tomato and chili and beat it again. Then add water and lemon and beat it again.
3. Place a bowl that you mixed ingredients in a pot from step1 and waiting around 20 minutes. Or you can steam it in simple way.
I like to eat with hot rice. It is very very nice. I love it.
Cooking Tips;
1. Water makes Kai Toon fluffier because water keeps the air in side beated egg.
2. If you add on salt, your Kai Toon will more look nicer than add fish and soy sauce.
Bai Toey or Padanus leaf.

When Thai people use for cooking?
1. If you need green color for cook dessert, let get start as below.
Spin Bai Toey Then boil spined Bai Toey. Add water as you want if you need strong green use a bit of water. However, this is natural color so it's soft green color. Ater that After that filter water. Use green water to cook your food.
2. For making smell. Just add it while cooking usually while boil water. :)
3. Use for pack food while we are cooking.
How to cook Kao Pad or Fried rice?
Posted by Tomyam-kung at 06:49Kao Pad is very easy for cooking. Its ingredient have too many as you want to eat. You can cook Kao Pad in your style. Here, I tell you to part of ingredient. First it's main ingredient and Second is additional ingredient that you can add one or more.
Main Ingredient:
1. Rice
2. Oil or butter
3. Garlic
4. Fish sauce or Salt or Soy Sauce
6. Sugar
Additional Ingredient:
7. Egg
8. Pak Chee Celery
9. Ton Hom or Green Onion
10. Tomato
11. Vegetable; you can add carrot, pea, corn, pineapple, etc.
12. Meat; you can add chicken, pork, meat, or fish(but in usually we use chicken and pork).
Prepare for cooking Kao Pad:
1. Rice for cooking Kao Pad should be more stiff than rice for serve. And keep it cool down after cooked.
How many cup of rice?
- It's depend on yourself. If you cook for yourself only, just use rice enough for yourself.
2. Slice green onion to like in a below photo.
3. Prepare egg as a below photo.
4. Slice Tomato to be quadrangle or as in a photo.
5. Preparing garlic; you can beat or slice.
6. Preparing your vegetable and meat.
Cooking Kao Pad:
1. Add oil or butter in the pan.
2. Add garlic after oil/butter it's hot. Frying garlic till it changed to yellow.
3. Add your meat (If you don't add meat you can leave this step).
4. Add Fish sauce/Soy sauce/salt.
5. Add a bit of sugar.
6. Add egg and and stir.
7. Add rice before egg are done.
8. Add your vegetable fry it till it done.
9. Close stove and add green onion.
10. Serve Kao pad with lemon. :p
Cooking Tips:
1. step 2-5 must be fast and medium stove. Then fry that till your meat are being done then change your stove to be low.
2. Add salt only that keep your rice still white.
3. Add rice before egg are done it's make rice be yellow. But it doesn't matter if you add Fish sauce or soy sauce.
4. Keep rice in freezer one night before cook Kao Pad. Because Rice is incoherent. So Kao pad is more nice to eat. :)
5. Add a bit of sugar make its taste are better.

How to cook Bua Loi Kai Wan?
Posted by Tomyam-kung on Thursday, 3 December 2009 at 14:01Yesterday my friend from Finland want to know the process of cooking Bua Loi. So I post the process of cooking Bua Loi. I wish my friend enjoy cooking Bua Loi. :)
Before start cooking. Do you know what is Bua Loi? Bua Loi is Thai sweet meat. It is one of delicious dessert. It is balls in coconut milk. But you can see many names. Its name depend on additional ingredient that we add such as egg so we call Bua Loi Kai Wan (Egg is Kai, Wan is sweet in Thai), if you add taro so its name is Bua Loi Puak (Puak is taro).
Let's see Bua Loi Kai Wan ingredient.
Main Ingredient: If you don't have ingredient as below it will not be Bua Loi
1. glutinous-rice flour
2. Coconut Milk
3. Sugar
4. Water
5. Salt
6. Bai Toey or Pandanus Leaf (for making good smell )
Additional ingredient: You can add one or more ingredient.
1. Egg
2. Taro
3. Corn
Making balls:
Mix glutinous-rice flour and begin add coconut milk (if you have a bit of coconut milk you can use enough of water). While you add coconut milk(or water) you have to knead the flour too. and add sugar (you can add as you want but should a bit because you must add sugar again while you boil balls.) Threat the flour till it soft. Then form about 1 cm diameter of ball.
Boiling balls:
1. Stew coconut milk and pieces of Bai Toey till it boiled. That you will see coconut milk float to surface.
2. Add balls till balls float to the surface. Stir it while you are boiling.
3. Add sugar and salt as you like.
Add additional ingredient:
1. Egg, you can add egg while it's boiling add 1 by one of egg, don't stir till it ready. Or boil egg in water then remove for serving.
2. Puak/Taro and corn you can add it before the ball.
**Important step**
EAT IT while it's still hot. It's very nice most time when my grandma was cooked it I always done before add additional ingredient. :P

Before to start cooking. Did you ever ask yourself what is cooking? I wonder myself about this question many times. Everyone know this word but what does it really mean?
I opened my dictionnary and: Cooking is the process of preparing food.
In my case, i think that cooking is to contribute of the taste of the food by many process as heating, mixing ingredients..

I created this blog because I want to tell about cooking tips. I learned about tricks from my family and myself. I will tell everything that I know about cooking. :)
Most people said cooking it is very easy. Yes it is very easy if you often cook it.
